Kale Slaw Spring Salad by Tammy Radke, Lakewood StoreIngredients 5 cups fresh chopped kale 3 cups torn romaine 1 package cole slaw mix 1 cup fresh chopped broccoli 1 medium fennel bulb, thinly sliced ½ cup shredded red cabbage 1 cup feta cheese ¼ cup sesame seeds 1/3 cup extra virgin olive oil 3 Tbsp. sesame oil 2 Tbsp. honey 2 Tbsp Apple cider vinegar 2 Tbsp. lemon juice 1/3 cup pureed strawberriesDirections Combine salad ingredients in a large bowl. Combine dressing ingredients in a separate bowl. Dress the salad just before serving. Top with sliced strawberries if desired. Refrigerate leftovers.
